Substitutes when baking

Some substitutes that may be worth knowing, when the grocery store is just too far away (or closed...):

Self-rising flour: (for each cup you need)
  • 1 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
Eggs: (for each egg you need)
  • 1 tbsp ground flax seed
  • 3 tbsp water, mix together and let stand for a few minutes
Buttermilk: (for each cup you need)
  • 1 tbsp vinegar or lemon juice
  • 1 cup milk, mix together and let stand for a few minutes
Oil: (for each cup you need)
  • 1 cup of applesauce

  1. Other egg replacer:
    1/4 c. mushed up fruit
    1/2 tsp baking powder

    The fruit can be banana (easy to smush, but gives what you're baking a banana-y taste) or applesauce, or whatever you like. The baking powder gives it the levaning agent present in eggs.
